    What one desires in his youth, one has in abundance in old age.

    Matsu el Viejo: the old one… but wise and complete. Our iconic wine from Matsu is therefore powerful, complex, and carries an old soul with it. A proud wine that you must learn to fathom to truly know. A deep cherry color with hints of violet. You smell ripe dark fruit, vanilla, and beautiful lightly toasted nutty notes. You taste deep notes of blackcurrant and plum, a full texture with firm tannins at the finish that keep the wine standing perfectly upright. A beautiful Tinta de Toro (the local name for Tempranillo) from ancient vines. The Matsu El Viejo: A wine you cannot ignore, sometimes stubborn and then again awe-inspiring.

    Matsu El Viejo is produced in limited quantities. A unique wine that has already received many national and international awards. Part of the Matsu series of wines, each representing its own character: El Picaro (the young one), El Recio (the robust) and the white wine La Jefa (the boss)

    Grape variety/Vinification
    Matsu El Viejo is made from Tinto de Toro, the local variant of Tempranillo in the Toro wine region, sourced from vines over 100 years old. The harvest is entirely by hand during the first 15 days of October when the grapes are fully ripe. The grapes are gently pressed in a pneumatic press, followed by natural fermentation in small concrete tanks. The wine undergoes 16 months of aging in new French oak barrels, after which it is bottled without filtration to preserve its natural characteristics.

    Matsu

    Matsu is Vintae's unique sustainable organic wine project in the Spanish wine region of Toro. The Toro wine region is located northwest of Madrid on the River Duero. Toro has held D.O. recognition since 1987. Raúl Acha, Vintae's winemaker, went in search of old vineyards for organic viticulture. In his search, he even found a vineyard with vines nearly 100 years old. This search and the winemaking process are reflected in the name of this wine project. Matsu means "patient balance" in Japanese. Matsu is inspired by the Japanese tradition of caring for nature in purity and simplicity. For Raúl, it is a tribute to the Spanish wine tradition. All wines are made from grapes grown in a completely natural environment, using the most advanced biodynamic techniques. The Matsu trilogy of wines represents the three generations of winemakers.

    Wine/Food Pairing
    Thanks to its tannins, Matsu El Viejo is an accompaniment to roasted lamb, game, and stews, among other things, but also serves as a perfect finish to a fantastic dinner with a fine selection of rich cheeses. That is when the ‘El Viejo’ speaks words of wisdom.
