    The U Passimiento Baglio Gibellina is made from 70% Nero d'Avola and 30% Frappato. These two grapes are the most famous grapes from the Italian island of Sicily. What is less conventional about this wine is the vinification process. The Frappato grapes are harvested relatively early, which preserves a lot of freshness. While the Nero d'Avola is left to hang for a long time. The grapes are dried somewhat, partly due to the wind in the vineyard. This produces very ripe, concentrated grapes with less moisture and a lot of sugars. The method of making wine with dried grapes is called the 'Passimiento' method. After the grapes have been pressed and vinified, they mature for a number of months in oak. When the wines from both grape varieties are ready, they are only blended into the U Passimiento Baglio Gibellina.
