How is non-alcoholic wine made?

Alcohol-free wines can be made in many different ways. At Kolonne null, they rely on gentle de-alcoholization through vacuum distillation, removing the alcohol from the selected starter wines to a maximum residual alcohol content of 0.3%. The vacuum has the advantage that the alcohol escapes at a temperature of 30°C. This is immediately followed by aroma recovery to capture the natural wine aromas. In this way, the varietal character and style of the wines are preserved. No artificial flavorings or colorings! To meet their sophisticated standards, they refine their wines with only a small addition of natural sugar. Why? To replenish the structure and sweetness lost through alcohol withdrawal, creating an ideal balance. Depending on the variety, they also add carbon dioxide to their wines to give special sparkling variants their effervescent character.
